Recipe Ingredients for Curry-lime quinoa salad

1 cup Quinoa
1 cup Organics Chickpeas
10 oz Carrots
0.5 cup, chopped Onions, Spring Or Scallions
0.25 cup, sliced Almonds
0.25 cup, packed Raisins, Golden Seedless
3 tbsp Olive Oil
2 lime yields Lime Juice
1 tbsp Curry Powder
0.13 tsp Ginger, Ground
0.13 tsp Cinnamon, Ground
0.75 tsp Salt, Table
0.38 tsp Pepper, Black

Recipe Directions for Curry-lime quinoa salad

  1. Zest & juice limes to get at least 6 tbsp juice, 1.5 tsp zest. Rinse quinoa & combine in saucepan with 1 1/4 cup water, 1 tbsp oil, 3 tbsp lime juice, the curry powder, ginger, & cinnamon, and 1/4 tsp salt. Bring to a boil then lower heat & cover; simmer 15 - 20 min.

  2. Meanwhile, toast sliced almonds, chop scallions. Combine remaining lime juice with 2 tbsp oil in small bowl, along with 1/4 tsp salt & 3/8 tsp pepper.

  3. When quinoa finishes cooking, mix in large bowl with chickpeas, scallions, raisins, almonds, carrots. Whisk dressing & pour over.
