Thick, hearty, high fiber soup. This soup was a bit too heavy for me. Next time try putting a bunch of sauteed peppers and/or carrots in there. Also try adding pieces of ham or chicken. Also, it might have a little too much salt (remember that once the soup goes down to room temp, the saltiness really comes out)

Recipe Ingredients for Curry Lentil Split Pea Soup

1/2 cup dry green split peas (actually 7/8 cup dry)
2/5 cup dry yellow split peas (actually 3/4 cup dry)
3/16 cup green lentils (actually 3/8 cup dry)
3/16 cup red lentils (actually 3/8 cup dry)
8 cups chicken broth
1 1/2 tablespoons canola oil
2 small onions (chopped)
2 tsp fresh cilantro (from frozen)
1/2 tsp dried ginger
2 tbs curry powder
14 ounce light coconut milk
2 tbs white sugar
3 teaspoons table salt

Recipe Directions for Curry Lentil Split Pea Soup

  1. Give the split peas and lentils a good rinse - until they no longer put off murky water. Place them in an extra-large soup pot, cover with the chicken broth, and bring to a boil. Reduce heat and simmer for 30 minutes, or until the split peas are soft.

  2. Place the oil in a pan over medium heat and add onions. Saute until onions are translucent. Add curry, ginger and cilantro and sauté for another 2 minutes.

  3. Add onions to the lentils along with coconut milk sugar and salt. Simmer, uncovered, for 20 minutes or so until peas are mushy and soup is thick.
