Recipe Ingredients for Curry lentil & chicken soup

1 cup lentils
1 tomato
4 cups chicken stock
2 carrots
1/4 cup celery
1 small onion
1 cup chicken
1 tablespoon curry paste

Recipe Directions for Curry lentil & chicken soup

  1. Soak lentils overnight in water. (Rinse them first.)

  2. Drain lentils. Cover with stock and bring to a boil.

  3. Reduce heat to low boil for ten minutes.

  4. Chop veggies into cubes. Add to lentils and stock.

  5. Stir in curry paste.

  6. Simmer until veggies are soft.

  7. This soup is a better second-day soup once the flavours have mellowed.
