Delicious red lentil curry that even my kids love!

Recipe Ingredients for Curry in a Hurry

1 small onion, chopped
1 clove garlic, minced
1 cup tomatoes, chopped
1/2 ounces curry paste
1 cup red lentils
2 1/2 cups cauliflower, chopped
2 1/2 cups water

Recipe Directions for Curry in a Hurry

  1. Saute onions, garlic and curry paste in 2 tbsps of water for about 5 minutes. I used canned diced tomatoes so you can use some of the juice from them if you like.

  2. Add tomatoes, lentils and water and cook for about 20 minutes.

  3. Boil or steam cauliflower until tender crisp and add to lentil mixture. Cook for about 5 minutes to let flavours blend.

  4. Serve with brown basmati rice and chutney (I like PC Peach Chutney) on the side.
