I just threw in my leftover veggies into a pan and made a frittata out of them.

Recipe Ingredients for Curry Frittata

4 eggs
1/2 cup Garbanzo Beans
1/2 cup potatoes
1/8 tsp salt
3 oz honey ham
1/4 cup carrots
1/4 cup green peppers
1/4 cup squash
1/4 cup zucchini
1/2 tsp safflower oil
1/2 tsp curry powder

Recipe Directions for Curry Frittata

  1. Heat a non-stick pan with a little safflower oil or cooking spray.

  2. Throw any leftovers into your pan and spread evenly across the bottom of the pan.

  3. Beat a few eggs and pour them over the leftovers (enough to eggs to cover the leftovers).

  4. Cover the pan with a lid and let cook for about 5-8 minutes, depending on the size of your frittata.

  5. Once the eggs have cooked to the top, flip the frittata to brown the other side for just a couple of minutes.

  6. Serve and enjoy =).
