Couscous flavored with curry flavoring, then mixed with vegetables and dried fruit.

Recipe Ingredients for Curry Couscous

1 cup raisins
1 cup dried cranberries
1 1/2 cups carrots, chopped
1 onion, chopped
1/2 bell pepper, chopped
1 1/2 cups celery, chopped
1 cup frozen peas
5 cups beef stock
4 cups couscous
1 1/2 tsp. curry powder
3 tsp. salt
1/2 tsp. pepper
1 tbsp. olive oil

Recipe Directions for Curry Couscous

  1. In a decent size pot (we are going to eventually stick all the ingredients in here, so it needs to be at least a decent size stock pot), begin heating the olive oil over medium heat.

  2. Meanwhile, chop the onion, carrots, celery and bell pepper into a fine dice.

  3. Place all the vegetables into the pan, plus 1 tsp. salt and cook; stirring occasionally, beginning to sweat the vegetables. Cover, stirring about every minute for 5 minutes.

  4. Once softened, yet not carmelized, pour 4 cups of the beef stock into the stock pot, bringing to a boil.

  5. Once boiling, pour all the couscous into the pot, stirring to make sure all the liquid covers all the couscous. Take the couscous off the heat and cover for 4 min.

  6. Afterwards, pour the couscous into a bowl and mix in the dried cranberries, raisins and frozen peas.

  7. Using the pot that was used to cook the couscous, boil the last cup of beef stock with the remaining ingredients: curry powder, salt and pepper.

  8. Once to beginning boil, pour the curry mixture into the bowl with the couscous, mixing thoroughly.

  9. Enjoy!
