Recipe Ingredients for Curry Coconut Beet Soup

8 fl oz Organic Lite
6 beets (2" dia, sphere) Beets
0.5 tbsp Coconut Oil, Unrefined, Organic
3 tsp Ginger, Ground
1 tbsp Green Curry Paste
0.5 medium (2-1/2" dia) Onions
2 cloves, raw Garlic

Recipe Directions for Curry Coconut Beet Soup

  1. Saute onion in oil until soft.

  2. Add garlic, ginger, and curry paste and stir for 2 minutes.

  3. Add 2 cups of water and beets (chopped into 1-inch cubes).

  4. Simmer about 40 minutes, or until beets are soft.

  5. Add coconut milk and puree.
