Recipe Ingredients for Curry chocolate swirl banana muffins

1 1/4 cup plain flour
1/2 cup wholewheat flour
1 tsp baking soda
1/4 tsp salt
1 1/2 tbsp curry powder
1/4 cup canola oil
3/4 cup light brown sugar
2 eggs
1/2 cup non-fat sour cream
4 bananas
1 tsp baking powder
1/8 cup cocoa powder

Recipe Directions for Curry chocolate swirl banana muffins

  1. Preheat oven to 350F and place rack in center of oven.

  2. Spray pan with veg oil.

  3. In large bowl, mix mashed bananas with baking soda and sour cream (or yogurt).

  4. In separate bowl, whisk together the oil, sugar and eggs.

  5. In another large bowl, whisk together the flours, and baking powder, and salt. (take out half and add the cocoa powder)

  6. Combine banana mixture with oil mixture and add half to each of the plain and chocolate mixtures. Stir until just moistened.

  7. Pour into prepared pan and smooth top.

  8. Bake for 30 mins (for large muffins) or until toothpick comes out clean.
