Recipe Ingredients for Curry Chicken Stir Fry

16 oz Chicken, Breast, Meat Only
1 medium (2-1/2" dia) Onions
1 cup, chopped Peppers, Sweet, Red
1 cup, chopped Peppers, Sweet, Green
4 serving Whole Baby Sweet Corn
6 oz Bamboo Shoots
4 oz Water Chestnuts
2 medium (4-1/8" long) Onions, Spring Or Scallions
1 cup, pieces or slices Mushrooms
1 tsp Curry Powder
2 1tsp Olive Oil
1 tbsp Red Curry Paste
2 tbsp Corn Starch
1/4 tsp Sea Salt
1 tsp Pepper, Black
1 cup,+chopped Broccoli
1 stalk, large (11"-12" long) Celery

Recipe Directions for Curry Chicken Stir Fry

  1. Prepare vegetables and cut into evenly cut bite-size pieces. Separate the mushrooms, green onion and broccoli into a separate bowl as these cook much faster.

  2. Start water for rice.... do not add salt. Cook according to directions and remove from heat, covered.

  3. Wash the chicken and pat dry, season with pepper, salt and curry powder. Cook the chicken on medium heat in olive oil until cooked through and tender but not browned. Remove from pan and let rest. Reduce heat or add vegetables right away to keep pan from overheating.

  4. In pan drippings, add the harder raw vegetables and cook on medium until just beginning to tender. Add the canned bamboo shoots, water chestnuts, baby corn and red curry paste. Add a little water if needed to keep food moving easily in the pan. Stir frequently. When veggies are heated through, add the corn starch to 1 cup of water, mix and add to the veggies. Stir gently until it begins to thicken. Add the remaining vegetables. Dice the cooled chicken into bite-size pieces and return to the pan. Reduce heat slightly and cover until the mushrooms are brown, tender and the broccoli is heated through and just barely cooked. Remove from heat and serve over hot rice immediately.

  5. Add soy sauce, salt to taste (sparingly if at all) and add additional curry powder to taste. Serves: 4
