Low fat and flavorful chicken salad

Recipe Ingredients for Curry Chicken Salad

2 lbs chicken breast
1 cup green onions
1 cup raisins
1/2 cup almonds
1 cup Low Fat Mayonnaise Dressing
1/4 cup Hellmanns Real Mayonnaise
2 teaspoons curry powder
1 salt and pepper

Recipe Directions for Curry Chicken Salad

  1. Either roast or poach chicken breast ahead of time or use store bought rotisserie chicken.

  2. Cut up chicken at room temperature into 1 inch bite sized chunks. Place in large bowl. Chop up green onions/scallions and make sure they are washed and dried before adding to chicken bowl. Add mayonnaise and raisins as well as almonds (slivered preferrably) to the mix. Stir and mix until everything is mixed well. Add salt and pepper to taste.
