A great tasting Trinidadian dish. Best made with "Chief" Curry powder. Great served with brown rice. (makes 32, 100 g -- 1 cup servings)

Recipe Ingredients for Curry Chicken

32 ounces Boneless, skinless Chicken thighs
1 cup curry powder
4 tsp minced garlic
8 medium red potatoes
1 1/2 cups chickpeas
1/4 cup coconut meat, dried (desiccated), creamed
1 1/2 cup water

Recipe Directions for Curry Chicken

  1. season chicken thighs with curry, garlic and other spices you enjoy

  2. Sear Chicken in a pot on high heat until light brown on all sides

  3. Add 1.5 cups of water, potatoes diced and chickpeas

  4. Add creamed coconut

  5. simmer for half hour to 45 minutes (until potatoes are tender)
