A spicy chicken & veggie dish. Great over rice.

Recipe Ingredients for Curry Chicken

1/2 c. green bell pepper
1/2 c. onion
1/2 c. celery
1 carrot
1/2 yellow squash
1/4 zuchini
2 cloves garlic, minced
2 T curry powder
2 T ground ginger
4 T orange peel, shredded
2 T corn starch
1/2 chicken breast, boneless, no skin, grilled

Recipe Directions for Curry Chicken

Grill chicken. Chop up all ingredients; large bite size pieces. Cooking spray a lagre skillet. Let skillet get hot. Add bell pepper, onion, celery, carrot, & garlic. Saute' for a few minutes; then add zuchini, yellow squash, and chicken. Take corn starch and mix in 1 cup cold water and add all seasoning. Pour water in skillet. Stirring constantly. Let thicken-if necessary add more water. Cook until veggies are chrisp tender.
