use rice mil and coconut extrat instead of coconut milk in this low fat version.

Recipe Ingredients for curry chicken

24 oz Fresh Skinless Chicken Breasts (4 6oz breasts)
1 cup rice milk
1 teaspoon coconut extract
2 tablespoons curry powder
1 tablespoons peanut butter
2 cloves garlic
2 tablespoons fresh ginger
1/3 cup splenda no calorie
8 oz green beans
10 oz. bamboo shoots
1 small yellow onion
1 red bell pepper

Recipe Directions for curry chicken

  1. cut chicken breasts into 1 inch peices, set aside.

  2. satae onion, in a small amount of chicken broth.

  3. add green beans, ginger, and chicken.

  4. stir fry until chicken done.

  5. Add the remaining ingredients, cook to a boil, then reduce heat. cook untill 1/2 of the liqued has evaporated.

  6. serve hot over rice.
