Recipe Ingredients for Curry Chicken Pot Pie

4 cups mixed vegetables
4 sprays canola oil
3 tbsp margarine
1 cup onion
1 cup celery
1 1/2 cups chicken broth
1/2 cup milk
3 tbsp flour
2 tbsp dried parsley
1 teaspoon salt
1/2 teaspoon pepper
2 cups cooked chicken
8 biscuits

Recipe Directions for Curry Chicken Pot Pie

  1. Preheat oven to 400 degrees F.

  2. Layer vegies on foil lined cookie sheet and spray with Canola spray. Cook until golden brown.

  3. In saute pan heat 1 tbsp margarine and sweat the onion and celery. In another saucepan, heat the broth and milk. Add 2 more tbsp of margarine to the celery mix and cook out the water. Add the flour and 1 teaspoon curry powder and cook for 1-2 minutes. Add the parsley, salt and pepper. Toss in the browned vegetables and the chicken. Pour into a shallow baking pan, or large terra cotta pot base, lined with foil, and top with 6-8 circles of biscuits. Place into the oven and cook until pastry has browned and mixture is hot and bubbly, about 25 minutes.
