Zesty but sweet filling for lettuce cups

Recipe Ingredients for Curry Chicken Lettuce Cups

0.77 lb chicken breast
3 stalks celery, chopped
1/2 medium apple
1/4 cup raisins
1/4 cup walnuts, chopped
1 dash pepper
1 tbsp curry powder
3 lettuce leaf

Recipe Directions for Curry Chicken Lettuce Cups

  1. Slice raw chicken into long strips and then chop into cubes.

  2. Cook chicken in skillet with a little water until white through. Drain and set aside.

  3. Slice celery lengthwise and chop. Chop apple into chunks - mix together.

  4. Mix curry powder with 3-4 tbsp homemade mayo and pepper.

  5. Mix together mayo, chicken, raisins, apple and celery.

  6. Serve in lettuce cups.
