Recipe Ingredients for Curry Cauliflower

1 tbsp olive oil
1 onion, diced
1/2 green pepper, diced
1 cup mushrooms, sliced
3 cups tomatoes
1 tbsp curry paste
3 cups coconut milk
6 cups cauliflower

Recipe Directions for Curry Cauliflower

  1. heat olive oil in dutch oven.

  2. saute' onion and green pepper for 5 minutes

  3. Add mushrooms and tomatoes cook 5 more minutes.

  4. Add curry paste and stir. Add coconut and stir all to blend.

  5. Cut cauliflower into large florets and simmer until softened slightly
