Apple & chicken in mild curry

Recipe Ingredients for Curry - Apple Curry Chicken

2 meduim onions
2 cloves garlic
2 serving chicken boolean
3 chicken thighs
8 meduim apples
1 tbs olive oil
3 tbs curry powder

Recipe Directions for Curry - Apple Curry Chicken

  1. Grate onion and garlic (by hand or in food processor); place oil and onion in a pot, fry over meduim heat until golden (5-10 minutes)

  2. Peel apples, remove core and grate (by hand or in food processor); add to onion and fry on meduim heat (10 minutes)

  3. Cook chicken in a second pot of boiling water for 15 minutes; cool off, remove skin, fat and hand shred into the apple mixture

  4. Add curry powder to tase, chicken boolean, salt, pepper and about a cup of water

  5. Let simmer for 10-15 minutes and serve over rice

  6. Taste better the second day!
