1 serving = 1 cup great way to use up extra summer zucchini. Add a dollop of sour cream to the soup if desired

Recipe Ingredients for curried zucchini and tofu soup

3 tbls extra virgin olive oil
2 large onions
3 tbls curry powder
2 green peppers, small
1 lb tofu
1220 g zucchini
8 cups chicken broth, swansons
1/4 tsp red pepper, ground

Recipe Directions for curried zucchini and tofu soup

  1. add oil to pan and heat up

  2. add onions, pepper, curry, and red pepper

  3. fry till onions are soft

  4. add shredded zucchini (4 cups)

  5. cook till softened

  6. add chicken broth

  7. bring to boil

  8. simmer covered for 10 min

  9. add tofu

  10. simmer covered for 10 min

  11. blend with hand blender
