Recipe Ingredients for Curried Zucchini Soup

24 oz Squash, Summer, Zucchini, Includes Skin
1 slice, medium (1/8" thick) Onions
2 clove Garlic
2 tsp Curry Powder
1 1tsp Olive Oil
1 large (3" to 4-1/4" dia.) Potatoes, Boiled
0.33 cup Almonds Sliced

Recipe Directions for Curried Zucchini Soup

  1. 1. Heat oil in large saucepan and add chopped onions til onion i s soft.

  2. 2. Add garlic & curry until fragrant,

  3. 3. Add zucchini, potato, and 4 cups water. Boil , and simmer til veggies are soft.

  4. 4. Puree soup

  5. 5. Serve chilled and garnish with almonds
