Recipe Ingredients for Curried winter vegetables and tofu stew

2 teaspoons canola oil
1 red onion, cut into chunks
5 teaspoons curry powder
3/4 lb potatoes cut into 1 inch chunks
1/2 lb broccoli florets
1/2 lb cauliflower florets
1/2 lb baby carrots
1 small red bell pepper cut into chunks
3 cups vegetable broth
1 cup reduced-fat coconut milk
3/4 lb firm tofu, drained and cut into 1 inch cubes
1/2 teaspoon dried red pepper flakes
3 tablespoons fresh lime juice
2 teaspoons sugar
1 salt and black pepper to taste

Recipe Directions for Curried winter vegetables and tofu stew

cook onion in oil for three minutes. add curry and cook for 1 minute. add potatoes, broccoli, bell pepper, cauliflower and baby carrots. coat with curry and onion. add veg broth and cocunut milk. bring to a boil and cover, reduce heat to medium and simmer for 15 mins. add tofu and red pepper flakes simmer uncovered 5 mins. add lime juice and sugar. season with salt and pepper
