2 tablespoons Olive Oil
1 cup Onions
3 Garlic
2 teaspoons Paprika
1 teaspoon Salt, Table
1 teaspoon Pepper, Black
1 teaspoon Coriander Leaves
1 teaspoon Cumin Seed
1 teaspoon Turmeric, Ground
1 teaspoon Ginger, Ground
1 teaspoon Pepper, Red Or Cayenne
3 cups Water
14 ounce Tomatoes, Red, Ripe
2 tablespoons Lemon Juice
2 Carrots
1 Squash, Summer, Zucchini, Includes Skin
1 cup Cauliflower
1 cup Peas, Edible-podded (sugar snap peas)
1 Sweetpotato
2 cups Celery
1 cup Coriander Leaves

Recipe Directions for Curried Veggie Quinoa

  1. Heat oil in large saucepan over medium heat. Add onion; sauté until soft, stirring often, about 5 minutes. Add garlic; stir 1 minute. Mix in paprika and next 8 ingredients.

  2. 2.Add 1 cup water, tomatoes, and lemon juice. Bring to boil. Add vegetables and quinoa. Cover and simmer over medium-low heat until vegetables are tender, stirring occasionally, about 20 minutes.

  3. 3.Stir in cilantro. Season with salt and pepper
