Vegetarian curried vegetables and lentils

Recipe Ingredients for Curried Vegetables and Lentils

2 small eggplant, chopped
2 medium red onions, chopped
2 cubanelle peppers, chopped
1 large carrot, chopped
1 medium tomato, chopped
4 cloves garlic, minced
1 cup dry lentils
3 tablespoon olive oil
2 tablespoon curry powder
2 teaspoon cumin
2 teaspoon salt
2 teaspoon basil
2 teaspoon oregano
1 teaspoon pepper
1 teaspoon brown sugar
2 tablespoon plain yogurt
1 dash tabasco sauce

Recipe Directions for Curried Vegetables and Lentils

  1. Mix eggplant with basil, oregano, and 1 tbsp olive oil; Roast in the oven for 20 minutes at 375F.

  2. Cook the lentils until tender.

  3. Add remaining olive oil to a large pan and heat over medium heat. Add onions. Once the onions have sweat, add garlic. Cook for about a minute, then add carrots. Cook for 5 minutes, stirring occasionally. Add peppers and cook another 3 minutes. Add eggplant, tomatoes, lentils and remaining seasonings. Add water by quarter cup until you reach desired consistency. Cover and cook on low heat for at least 10 minutes.

  4. serve over rice, toasted bread, or greens.
