Slightly modified from Moosewood Restaurant Cooks at Home, p. 206. Serve over basmati rice. This makes huge servings - the book says 4-6, you could probably say more!

Recipe Ingredients for Curried Vegetables with Dahl

1 1/2 cups green split peas
7 cups water
1 onion, chopped
3 tbsp vegetable oil
3 cups yams, diced
5 grams Patak's curry paste
1 tsp cumin, ground
2 tbsp fresh ginger root, grated
1 head cauliflower, chopped
2 red bell peppers, chopped
9 oz fresh spinach
2 tbsp lemon juice

Recipe Directions for Curried Vegetables with Dahl

  1. Rinse the split peas. In a covered saucepan, bring 5 cups water and the peas to a boil. Reduce the heat, uncover, and simmer until tender, about 30 minutes.

  2. In a large soup pot, saute the onion in the oil for several minutes. Add the sweet potatoes, curry paste, cumin, and ginger, and saute for 2-3 minutes, stirring often. Pour in 2 cups of water. Cut the cauliflower into florets and add to the pot. Add the bell peppers, cover, and simmer for 10 minutes.

  3. While the vegetables simmer, rinse, stem, and coarsely chop the spinach. Pour the peas and their cooking liquid into a blender or food processor, and puree for 2-3 minutes to make a smooth dahl. When the cauliflower is tender, stir in the spinach, the dahl, and the lemon juice. Simmer just until the spinach has wilted. Serve immediately.
