Recipe Ingredients for curried vegetable stew

6 potatoes
300 g carrots
400 g broccoli
3 onions
1 stock cube
1 tbsp curry powder

Recipe Directions for curried vegetable stew

  1. peel and wash all vegetables

  2. soften onions in a pan with a little oil

  3. chop the carrots and half the potatoes

  4. add carrots, potatoes and onions to a pan of water and bring to the boil

  5. crumble a stock cube in and add the curry powder

  6. allow to simmer for 30min

  7. add broccoli and simmer for a further 10mins

  8. eat with crusty bread or on its own
