Recipe Ingredients for curried vegetable stew

4 potatoes
6 carrots
2 large onions
4 cloves of garlic
1 stock cube
500 g broccoli
400 g red kidney beans
2 tbsp curry powder

Recipe Directions for curried vegetable stew

  1. peel and prepare all vegetables

  2. fry the onions, and garlic together in 1tsp of olive oil until onions are softened

  3. Add the potatoes and carrots and turn them in the oil

  4. Add the curry powder

  5. Crumble in the stock cube and add enough boiling water to cover all the vegetables

  6. bring to the boil and simmer for 25mins

  7. add the broccoli and simmer for a further 10mins

  8. add the kidney beans and simmer for a final 5mins

  9. serve with crusty bread (preferably Irish brown-bread)
