Pureed curry flavoured vegetable soup.

Recipe Ingredients for Curried Vegetable Soup

2 tsp Vegetable Oil, Canola
1 cup, chopped Onions
1 cup, chopped Carrots
1 cup, diced Celery
3 tsp Curry Powder
4 tsp Sugars, Granulated
2 cloves, raw Garlic
4 cup Organic Vegetable Broth
2 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 cup Potatoes, Boiled
1/4 tsp Salt, Table
1/4 tsp Pepper, Black

Recipe Directions for Curried Vegetable Soup

  1. Heat canola oil in large saucepan on medium-high. Add next 3 ingredients. Cook for about 3 minutes, stirring often, until vegetables start to soften.

  2. Add next 3 ingredients. Heat and stir for about 1 minute until fragrant.

  3. Add next 5 ingredients. Stir. Bring to a boil. Reduce heat to medium-low. Simmer, covered, for about 10 minutes until vegetables are soft. Carefully process with a hand blender or in a blender until smooth.

  4. Makes about 7 1/2 cups.
