This soup tasted creamy, but is actually dairy free. Very high in fibre, and a perfect way to use up vegetables (feel free to mix and match). freezes beautifully.

Recipe Ingredients for Curried Vegetable soup

1/2 tbsp olive oil
2 tbsp ginger
1 cup onion
2 clove garlic
2 cup squash
2 cup carrots
2 cup yam
1 cup potato
2 cup cauliflower
1 cup water
2 cup cooked lentils
2 tbsp curry powder
1/2 tbsp brown sugar
200 ml lite coconut milk

Recipe Directions for Curried Vegetable soup

  1. heat olive oil in the bottom of a large stock pot. Cook onions until transparent. Add ginger and garlic and cook a few more minutes.

  2. Dice the vegetables and add to the stock pot. add water and lentils (yellow split work best) Cook for 30 min or until vegetables are tender.

  3. Add brown sugar and curry powder. Blend with a hand blender until smooth. Slowly add coconut milk. If soup is too thick for your liking, add more water.
