Recipe Ingredients for Curried Turkey Cutlets with Dried Apricots

4 serving Boneless turkey breast chops (Shady Brook Farms)
1/4 tsp Salt
3 dash Pepper, Black
1 tbsp Olive Oil
0.5 cup, chopped Onions
3 clove Garlic
3 tsp Ginger Root
1.5 tsp Curry Powder
0.75 cup Apple Juice, Canned Or Bottled, Unsweetened
3 oz Apricots, Dried, Sulfured, Uncooked
1 serving Cornstarch
2 medium (4-1/8" long) Onions, Spring Or Scallions
0.2 oz Mint

Recipe Directions for Curried Turkey Cutlets with Dried Apricots

  1. Pat turkey cutlets dry with paper towels; sprinkle with salt and pepper. Heat oil over medium-high heat in a large nonstick skillet or cast iron skillet. Add turkey and cook until browned on both sides and no longer pink in center, 2-3 minutes per side. Transfer to a plate and set aside. (Don't overcook the turkey -- it will continue to cook while resting.)

  2. Add onion to the pan; cook, stirring for 1 minute. Add garlic, ginger, and curry; cook, stirring, until fragrant (about 30 seconds). Add juice and chopped apricots and bring to a simmer. Cook until the apricots are plump and liquid is slightly reduced. Add 1 tsp of cornstarch mixed with a few tablespoons of water to the pan and cook, stirring until thickened, about 1 min. Return the turkey and any accumulated juices to the pan. Cook, turning the cutlets a few times, until coasted and heated through, 1 to 2 minutes. Stir in the scallions and mint and serve.
