Recipe Ingredients for Curried tofu with Tomatoes

2 cups onion, chopped
1 large red bell pepper, chopped
1 tsp salt
2 tbsp vegetable oil
4 garlic cloves, minced
1 1/2 tbsp ginger root, grated
10 g or 2 tbsp Patak's Curry Paste
1/2 tsp ground cinnamon
16 oz extra firm tofu
28 oz diced tomatoes

Recipe Directions for Curried tofu with Tomatoes

  1. In a large saucepan with a lid, cook the onions, peppers, and salt in the oil on medium-high heat until softened, about 5 minutes.

  2. Add the garlic, ginger, curry paste, cinnamon, and tofu. Cover and cook on medium-low heat, stirring frequently, for 5 minutes.

  3. Add the tomatoes, cover, and simmer for about 10 minutes to allow the flavors to develop. Occasionally stir gently.

  4. Add black pepper or hot sauce to taste.
