Recipe Ingredients for Curried Tofu Salad

14 ounces extra firm tofu
1/2 cup mayonnaise
2 tsp curry powder
16 ounces pineapple, crushed & drained
1/4 cup raisins

Recipe Directions for Curried Tofu Salad

  1. In a medium saucepan cover the block of tofu with water, bring to a boil, cover and simmer for 10 minutes.

  2. While the tofu is boiling, in a large bowl whisk together the mayo and curry powder, stir in the pineapple and raisins and set aside.

  3. After the 10 minute boil, drain the tofu and place in a bowl of ice water until it is cool enough to handle. Cut the tofu into 1/4" cubes and fold into the mayo-curry mixture. Cool completely & serve.
