Tofu spin on Curried Chicken Salad.

Recipe Ingredients for Curried Tofu Salad

19 ounces of organic tofu
3/4 cups of mayonnaise
3 tsp curry powder
1/2 teaspoon sea salt
1 teaspoon apple cider vinegar
1/2 teaspoon fresh ground black pepper
1/4 teaspoon ground cayenne pepper
1 apple
1 cup corn
3/4 cup raisins
1 cup walnuts

Recipe Directions for Curried Tofu Salad

  1. In a medium saucepan cover the block of tofu with water, bring to a boil, cover and simmer for 10 minutes.

  2. While the tofu is boiling, in a large bowl whisk together the mayo and curry powder, stir in the pineapple and raisins and set aside.


  3. When Tofu is finished put in bolw of ice water until cool enough to handle.

  4. Cut into small cubes. 1/4 inch.

  5. Fold in Tofu.
