An easy meal idea, and totally vegetarian.

Recipe Ingredients for Curried Tofu

5 serving Tofu Extra Firm Organic Trader Joe's
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 medium (2-1/2" dia) Onions
8 tbsp Curry Powder
1 tbsp Olive Oil
1/2 cup cherry tomatoes Tomatoes, Red, Ripe

Recipe Directions for Curried Tofu

Mix the curry powder with 1-2 teaspoons of the oil to make a rub. Apply to slices of tofu. Fry the tofu with the remaining oil on medium in a non-stick pan. Once the tofu starts to become dry, add the peppers, onion, and tomato. Cover and heat until onion and peppers are soft, stirring occasionally. Enjoy!
