Recipe Ingredients for Curried Sweet Potato Soup

40 oz Sweetpotato
5 cup (8 fl oz) Water
1 cup Coconut Milk, Canned (Liquid Expressed From Grated Meat And Water)
45 grams Celery
312 grams Onions
4 grams Garlic
30 grams Lemon Juice
5 tsp Vegetable Base
3 tsp Curry Powder
0.8 tbsp Red Curry Paste
2.5 1tsp Olive Oil

Recipe Directions for Curried Sweet Potato Soup

  1. Soften sweet potatoes in 400F oven for 50 minutes

  2. Saute onions, celery and garlic in pot for 5 minutes at medium heat

  3. Add cooled sweet potatoes

  4. Add curry powder and mix together

  5. Add broth and curry paste

  6. Bring to a boil; stir occasionally

  7. Simmer for a few minutes

  8. Remove from heat and add coconut milk

  9. Puree with an immersion blender

  10. Squeeze in half a lemon and mix in gently

  11. Serve hot

  12. Garnish with; sour cream, green onions, yogurt, cayenne pepper
