Recipe Ingredients for Curried Sweet Potato & Lentil Soup

2 tbsp Butter
2 sweetpotato, 5" long Sweetpotato
3 stalk, medium (7-1/2" - 8" long) Celery
2 medium Carrots
1 large Onions
1 clove Garlic
1 tbsp Curry Powder
3 tsp Ginger Root
5 g Cumin Powder
5 grams Coriander Powder
1 tsp Salt, Table
0.13 tsp Pepper, Red Or Cayenne
28 fl. oz (trader joe's) organic low sodium chicken broth
16 oz Lentils, Mature Seeds
6 cup (8 fl oz) Water

Recipe Directions for Curried Sweet Potato & Lentil Soup

  1. In 6-quart Dutch oven, melt butter over med. heat. Add sweet potatoes, celery & onion (all chopped) and cook, stirring occasionally, till onion is tender (~10 min.). Add garlic, curry powder, ginger, cumin, coriander, salt, & red pepper; cook, stirring, one minute.

  2. To veggies, add broth, lentils (rinsed & picked through), & water; heat to boiling over high heat. Reduce heat to low; cover & simmer, stirring occasionally, until lentils are tender, 40-50 min. Serve with yogurt, toasted coconut, & lime wedges, if you like.
