A doctored version of Food Network's Simple Curried Sweet Potato Soup.

Recipe Ingredients for Curried Sweet Potato and Black Bean Soup

2 onions, chopped
2 garlic cloves, chopped
1 1/2 lb sweet potatoes, peeled and chopped
1 tsp coriander
6 cups low sodium chicken broth
1 tbsp curry powder
28 oz black beans
1 tbsp butter

Recipe Directions for Curried Sweet Potato and Black Bean Soup

  1. Sweat 2 chopped onions, 4 chopped garlic cloves, 3 peeled and cubed sweet potatoes (about 1 1/2), 1 tsp coriander, and 1 tbsp curry powder in butter.

  2. Simmer with 6 cups chicken broth until soft.

  3. Puree.
