Squash soup with curry, thyme and coconut milk, made the healthy way.

Recipe Ingredients for Curried Squash Soup

2268 grams butternut squash, cooked
1/2 cup chopped onion
1 teaspoon olive oil
13 1/2 fluid ounces coconut milk
4 cups water
8 teaspoons chicken bouillon
1 tablespoon thyme
3 tablespoons Madras Curry Powder
1 fresh ground pepper, to taste

Recipe Directions for Curried Squash Soup

  1. Saute the onion in as little olive oil as possible, up to 1tsp.

  2. Add chopped and peeled squash, water and spices.

  3. When cooked through, blend in the blender in batches.

  4. Return to cooking pot and stir in coconut milk.

  5. Heat to desired temp and serve with some crusty bread!
