Recipe Ingredients for Curried Squash Soup with Goat Cheese

200 g butternut squash, raw
8 fl oz Organic Low Sodium Chicken Broth
1 tbsp Minced Garlic
2 tsp Curry Powder
1/4 tsp Spices Ground Black Pepper
1 medium (approx 2-3/4" long, 2-1/2" dia) red Pepper, raw
1 packet Stevia
1/2 oz Goat Cheese

Recipe Directions for Curried Squash Soup with Goat Cheese

cube & seed squash (leave skin on) & place in chicken broth over low heat. add minced garlic, diced/seeded red pepper, curry & black pepper. stir occasionally until vegetable soften to spoon's touch. carefully place contents in blender or processor & puree. place back into pot on simmer, add stevia to taste, if desired. serve hot with crumble goat cheese on top.
