Recipe Ingredients for curried squash over rice (vegan)

1/2 winter squash
2 medium carrots, sliced
1 onion
2 cloves garlic, minced
1 tbsp curry powder
8 oz. low-fat coconut milk
2 tbsps fresh cilantro
1/2 tsp salt
2 tbsp olive oil
2 cups rice

Recipe Directions for curried squash over rice (vegan)

  1. Slice the onion thinly.

  2. Peel the butternut squash and cut into 1" cubes. Slice the carrots.

  3. Saute the onion in oil for a few minutes, until shiny. Add the garlic and continue to saute for 30 seconds. Add curry powder, salt, and cilantro. Mix with squash and carrots, and toss it all in an 8 by 13 baking dish. Pour milk over it, cover, and bake at 375 for about 45 minutes. Serve over rice.
