A dish I modified because I didn't have eggplant.

Recipe Ingredients for Curried squash and chickpea stew

16 oz chick peas
1 1/2 cup Squash, Summer, Zucchini, Includes Skin
1 cup Green Bell Pepper
2 tbsp curry powder
1 cup onion diced
2 tbsp garlic minced
1 tsp salt
1 tsp black pepper
1 cup water
1/4 cup white wine

Recipe Directions for Curried squash and chickpea stew

  1. Saute bell pepper and onion till al dente

  2. add garlic, curry powder, and salt and let cook for a few minutes

  3. add chick peas, squash, water, and wine.

  4. Cover and bring to a boil, simmer for 25-30 minutes.

  5. Add more water if it simmers out.
