Recipe Ingredients for Curried Squash and Chicken Soup

10 oz butternut squash, pureed
1/2 c lite coconut milk
1/2 c water
8 oz chicken breast, boneless, skinless, thinly sliced
6 oz baby spinach
2 tsp lime juice
2 tsp brown sugar
1/2 tsp Thai red curry paste

Recipe Directions for Curried Squash and Chicken Soup

  1. Heat squash, coconut milk and water in a medium saucepan over medium-high heat.

  2. Cook, stirring occasionally, until squash defrosts, about 10 minutes.

  3. Add chicken, reduce heat to medium and simmer, stirring occasionally, for 3 minutes.

  4. Stir in spinach, lime juice, sugar and curry paste, and continue cooking until chicken is cooked though, about 3 minutes longer.
