Yellow Pea Soup with flavour of curry

Recipe Ingredients for Curried Split Pea Soup

1 tbsp Peanut Oil
2 onions, medium
2 carrots, large
4 stalks celery
4 cloves garlic
4 cups chicken stock
4 cups water
1 cup peas, yellow split
1 tsp curry powder
1 tsp ground cumin
1 tbsp dried parsley
6 oz sliced ham

Recipe Directions for Curried Split Pea Soup

Heat oil in large saucepan, add onion, carrot and celery and cook for 5 minutes, stirring occasionally. Add garlic. Add remaining ingredients, except parsley. Bring to a boil, reduce heat and simmer uncovered for 1 hour until peas are tender. Add parsley prior to serving.
