Split pea soup with curry -- tasty & hearty as a meal or side dish.

Recipe Ingredients for Curried split pea soup

2 carrots, chopped
2 celery stalks, chopped
1 small onion, diced
6 cloves garlic, minced
2 potatoes, red skin, small, chopped
2 cups split peas
1 1/2 tablespoons butter
7 cups vegetable broth

Recipe Directions for Curried split pea soup

  1. Saute the vegetables in the butter (or olive oil) until soft.

  2. Add 2tsp curry powder, 1tsp cumin & cook for ~5mins.

  3. Add peas, broth & a bay leaf.

  4. Simmer for several hours until thick & peas are soft, adding more stock if needed.

  5. Puree half in food processor (optional) before serving.
