Recipe Ingredients for Curried split pea

1 tablespoon olive oil
1 onion, chopped
1 carrot, chopped
4 cloves garlic, sliced
4 cups vegetable broth (low-salt)
4 cups water
1 cup yellow split peas
1 teaspoon curry powder
1 teaspoon ground cumin
1/2 cup parsley, chopped

Recipe Directions for Curried split pea

Heat oil in a large saucepan over medium-high heat. Add onion; cook 5 minutes, stirring occasionally. Add carrot and garlic; cook until softened, about 5 minutes. Add remaining ingredients except parsley; bring to a boil. Reduce heat; simmer uncovered 30 minutes or until peas are tender. Ladle into bowls; garnish with parsley.
