Recipe Ingredients for Curried Spinach Soup

10 oz spinach
2 T olive oil
1 onion
2 cloves garlic
1 tsp ginger
2 tsp curry powder
6 c water
1 1/2 potato
1/3 c basmati rice
1 tsp salt

Recipe Directions for Curried Spinach Soup

  1. Wash spinach thoroughly and remove stems. Set aside.

  2. Saute onion in olive oil over medium heat for 5 minutes until soft.

  3. Add garlic, ginger, and curry. Saute for 3 minutes, stirring constantly so curry does not burn.

  4. Add water, potato, rice, and salt. Bring to boil, reduce heat, cover and simmer for 15 minutes or until rice and potato are cooked.

  5. Add spinach and cook for 3 minutes.

  6. Transfer soup to blender and puree until smooth. Return to pot, reheat, if needed, and serve.
