Recipe Ingredients for Curried Spinach-Potato Soup

1 tbsp olive oil
1/2 cup onion
1 tbsp curry powder
2 cup vegetable broth
1 cup potato, peeled
1 tsp salt
5 oz fresh spinach
2 cup low-fat milk

Recipe Directions for Curried Spinach-Potato Soup

  1. Heat oil in large saucepan over medium heat. Ass onion and 1 tbsp water and cook, stirring often, until tender. About 5 minutes.

  2. Add curry powder and stir 30 seconds.

  3. Add broth, potatoes, and salt, bring to a boil.

  4. Reduce heat to low, cover and cook until potatoes are tender, about 10 minutes.

  5. Stir in spinach and cook until just wilted, about 1 minute.

  6. Cool slightly. Puree soup in blender until almost smooth; work in batches if necessary. Return soup to saucepan.

  7. Add milk and cook over medium-low heat. Season to taste with salt and pepper.

  8. Ladle into 4 bowls. Garnish with swirl of plain yogurt, if desired.
