Recipe Ingredients for Curried Soycutash

2 cups couscous
1 bouillon cube
2 1/2 cups water
1 tablespoon extra virgin olive oil
1/2 onion, chopped
2 carrots, grated
1 zucchini, grated
1 sweet potato, grated
1 celery stalk, chopped
1 tablespoon fresh ginger, grated
1/2 cup soy beans, frozen
1/2 cup corn, frozen or canned
1/8 cup red bell pepper, julienned
1/4 cup 2% milk
1 tablespoon curry paste

Recipe Directions for Curried Soycutash

Bring water to boil with bouillon cube. Add couscous. In a seperate pan, saute onion in olive oil. Add celery, cook for about 1 minute. Add carrots, zucchini, and sweet potato, cook for about 5 minutes, or until soft. Add soy beans, corn, and bell pepper. In a small bowl, dissolve the curry past in the milk. Add to veggie mix. Serve over couscous.
