Recipe Ingredients for Curried Shrimp with Quinoa

12 ounces shrimp (15151), cooked per recipe, net from 1 lb fresh or frozen large shrimp, peeled and deveined
1 cup quinoa
1 tsp olive oil
1 cup chopped onion
1 tbsp grated fresh ginger
1/2 tsp curry powder
1/2 tsp cumin
1/4 tsp cayenne pepper
6 oz (2 cups) snow pea pods, trimmed and halved lengthwise
1/4 cup orange juice
3 tbsp (unsweetened) light coconut milk (97228)
1/4 tsp salt
1/2 cup snipped fresh cilantro

Recipe Directions for Curried Shrimp with Quinoa

  1. Rinse shrimp and pat dry; set aside.

  2. Rinse quinoa in cold water and drain in a fine-mesh strainer. In a medium saucepan, bring 1-1/2 cups water to a boil; add quinoa and return to a boil. Reduce heat, cover and simmer until all the water is absorbed, about 15 min. Remove from heat and let stand 5 min.

  3. Meanwhile, in a large nonstick skillet, heat oil over medium heat. Stir in onion and cook until tender, about 5 min. Add ginger, curry powder, cumin and cayenne; cook for 1 min. Add shrimp and snow peas and stir until shrimp are cooked, about 3 min. Stir in orange juice, coconut milk and salt; heat through.

  4. Serve shrimp mixture with quinoa. Top with cilantro. Makes 4 servings.
