Vegetable main course to serve with side of your choice, my favourite is wholegrain rice.

Recipe Ingredients for Curried Roasted Vegetables

750 grams Cauliflower
180 grams Carrot
335 grams Red Pepper
190 grams Onion
35 grams Olive Oil
1 teaspoon Cumin
1 teaspoon Coriander
1 teaspoon turmeric

Recipe Directions for Curried Roasted Vegetables

  1. Pre-heat oven on Fan 180c

  2. Chop the vegetables, and break the cauliflower into florets. Try to have vegetables roughly the same size so they all need the same baking time and place them all in a plastic bag.

  3. Sprinkle the spices over the vegetables then add the olive oil shake well to ensure all the veg have spices on them.

  4. Pour out into a large roasting dish

  5. Cook for approximately 45 mins until vegetables are cooked through, serve.
