This salad can be made with almonds or chicken or turkey. There are man varieties of curry powder on the market, some mild and some hot. You may need to adjust the amount of curry used in the recipe depending on the 'heat' of the powder you choose.

Recipe Ingredients for Curried Rice Salad

3 cup Brown Rice uncooked
1 cup Almonds Sliced
1 cup, diced Celery
1/2 cup, chopped Onions, Spring Or Scallions
4 oz Cilantro
4 oz Lemon Juice
3 oz Extra Virgin Olive Oil
1 tbsp Curry Powder
2 tsp Salt, Table
1/4 tsp Pepper, Black
2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 cup Corn, Sweet, Yellow

Recipe Directions for Curried Rice Salad

  1. Cook rice and set aside to cool in large bowl,

  2. Stir in almonds (or poultry, if using), celery, tomatoes, green onions and cilantro.

  3. In small bowl, mix lemon juice, olive oil, curry, salt and pepper.

  4. Pour dressing onto rice mixture, stirring thoroughly.

  5. Adjust the seasoning.

  6. Serves 6
