Recipe Ingredients for Curried Rice Salad

1 1/2 cups white rice, cooked
1 tbsp olive oil, extra virgin
2 cups celery, chopped
1 carrot, grated
1 cup Miracle Whip, fat free
1 1/2 tsp curry powder
1 tbsp vinegar
1 cup peas fresh in season, frozen or canned
1/2 cup onion, chopped

Recipe Directions for Curried Rice Salad

  1. Mix rice, vinegar, curry powder, onion, oil, salt and pepper in a large bowl and place in fridge for at least 2 hours or up to overnight.

  2. Add celery, peas, carrot, and dressing.

  3. Mix well and serve.
